CLASSIC SUJUK

Sucuklu Klasik is as plain as its name. Grilled sucuk, pepper, tomato and a scoop of fries — nothing else.

That simplicity is deliberate. Sucuk is a spiced, fatty sausage; on the grill it renders, the edges curl and crisp. Add cheese or sauce on top and that flavour softens. We kept the classic version for people who actually want to taste the sucuk.

If you are curious about the cheese version, look at Sucuklu Kaşarlı — the cheese reins the spice in a little. But if this is your first time, we would start with the classic. Ayran or a cold beer goes well alongside.
